About Rahel's Special Dish:
These wings take their cue from Indonesia’s beloved sambal bawang - a fiery mix of garlic, shallots, and chilli fried until fragrant, then transformed into a sticky, glossy glaze with palm sugar and kecap manis. Double-fried and starch-coated, the wings stay shatter-crisp under the sauce, finished with a generous scattering of crispy shallots for extra bite.
On the side, a cool, tangy acar of pickled cucumber, carrot, onion, and chilli cuts through the heat and richness. Messy, bold, and unapologetically inspired by Indonesian flavours, they’re perfect for sharing over drinks - hot, sour, sweet, salty, and crunchy all at once.
