Turn your dinner debris into a North Indian-inspired extravaganza courtesy of Sonita’s

‘Turkey – what a beautiful meat! So packed with flavour and deliciousness,’ said absolutely no one, ever. Yet most of us will still subscribe to tradition and wolf down piles of the stuff come Christmas Day, and then, after the revelry has died, will be left chewing mournfully on the hard, dry leftovers. Well, no more! Sonita’s is here to keep the spirit of feasting alive with its Christmas leftovers curry recipe. Shove in all the dinner debris from the day before and you’ll eat like (three) kings for days. It may even change how you think about turkey. CHRISTMAS LEFTOVERS CURRY

To serve four you will need

3 tablespoons of coconut oil
4 green cardamom pods
1 teaspoon of cumin seeds
1 teaspoon mustard seeds
2 bay leaves
3 chopped onions
5 cloves garlic finely chopped
1 tablespoon ginger grated
Half teaspoon ground turmeric
Half a teaspoon of ground cumin
4 green chilli’s chopped (optional)
3 tomatoes chopped
400ml chicken stock or water
2 tablespoons finely chopped coriander
1 teaspoon garam masala
Salt

Leftover roast turkey
Any leftover vegetables (potatoes, sprouts, carrots, parsnips etc.)

The method

Heat the coconut oil in a pan and sauté the whole spices with the bay leaves until they begin to crackle. Add the onions and cook until they turn a golden brown colour. Stir in the ginger and garlic and saute for one minute. Then add all of the ground spices (except the garam masala), plus the green chillies and chopped tomatoes. Cook for around 10 minutes, until the tomatoes become soft.

Add the leftover turkey and vegetables. Add stock and salt to taste.  Mix well and simmer on a low heat for 15 minutes. If the sauce is too thick add more stock.

Once cooked, stir in the Garam masala and garnish with chopped coriander. Serve on a bed of rice or with Indian bread.

And finally, eat your curry and marvel at the gloriousness of turkey for the first time ever.
