Ink is here to make your calamari dreams come true. This street food vendor with a laser focus (it’s all about baby squid) rustles up salt and crispy calamari mixed with pickled chillies, coriander and spring onions, topped with a soy and sesame dressing. These are tender and tasty squid pieces (never straight-from-the-freezer rubbery). For dipping? Ink offers a selection of mayos in the prettiest of pastel shades: wild garlic, smoked chilli or miso.
